Ingredients

  • 1 lb ground beef
  • 2 green bell peppers diced
  • 2 onions diced
  • 1 red bell pepper diced
  • salt & pepper
  • garlic powder
  • onion powder
  • 1 packet taco seasoning
  • 2 large spoonfuls jarlic or 8 cloves garlic diced
  • 1 can rotel
  • 1 can corn (drained)
  • 1 small can of green chilis
  • 3/4 cups water
  • Cornbread mix (mixed to package instructions)

Instructions

  • Preheat oven to 350
  • Add ground beef to a oven safe pan and begin to brown
  • Add onions and peppers and begin to saute until vegetables are getting soft
  • Add salt and pepper, onion, and garlic powder to taste
  • Add in 1 packet of taco seasoning
  • Add in 2 large spoonfuls of jarlic (or diced garlic)
  • Add rotel, drained corn, green chiles, and water
  • Stir well and allow heat to let it combine for 3-5 minutes
  • In a separate bowl, whisk together cornbread mix and gentle spread it over the beef mixture
  • Bake at 350 degrees for 50 minutes or until cornbread is golden on the top
  • Serve and enjoy!
